Why does a hip roof take more material than a gable roof?
Because every hip is a diagonal cut through full shingles, and the offcuts mostly become waste. Then the hip itself has to be capped, which uses cap shingle the same way a ridge does. A hipped house and a gable house with the same footprint are not the same roof to buy or to install.
